VINIFICATION AND AGING
Harvesting: Hand-harvesting in small 10-kg crates on the morning of Saturday, October 19, 2019.
Vinification: Soft press followed by static clarification in non-vitrified cement vats.
Fermentation: In 225-liter French oak barriques
Fermentation temperature: 16°C
Fermentation duration: 20 days
Malo-lactic fermentation: yes, total
Aging: 11 months in 225-liter French oak barriques followed by 14 month-aging in bottle before commercialization.
Bottles produced: 941 bottles and 30 magnum
TASTING NOTES
Appearance: The wine is clear, brilliant and lemon-yellow hued with tinges that shift to green.
Nose: The intensity of the scent is strong but never overwhelming. Discernible hints of citrus fruits and herbaceous characteristics of fresh cut hay and white flowers.
Palate: The wine is dry, characterized by its high acidity that guarantees dynamism and great drinkability, making the wine lean and vibrant at the same time. The aromas discerned by the nose are once again found on the palate. The wine is savory and the finish is decidedly mineral.
