VINIFICATION AND AGING
Hand-harvested in 20-kg crates.
Soft press followed by static clarification in stainless steel vats.
Fermentation in cement at a controlled temperature of 16°C for 20 days.
Aged 8 months in cement with frequent bâtonnage.
Aged 2 months in bottle.
Clear, brilliant, intense yellow with green hints. The intensity of the aroma is strong. Discernable tropical notes and herbaceous characteristics of fresh cut hay and white-fleshed fruit.
The wine is dry, characterized by a balanced quality that makes this wine pleasant from the very first sip.
The acidity, present but not excessive, gives this wine verve and freshness which, combined with the complexity and structure of the wine, brings out its features.
